As Passover approaches, just before the cleaning and removal of leaven from our homes, I examined the new mixer from the DAVO brand, used for preparing the weekly dough for Shabbat challahs. Curious about its performance and my satisfaction? Dive into the full review.

DAVO PRO recently launched the professional DSM5750 mixer, promising to be robust and powerful beyond comparison. As it arrived precisely before Passover, I put it to the test with leaven I took out of the pantry.

In previous years, we either burned leaven or disposed of open bags of flour. This year, I decided to make challahs out of them, especially since, like all of Israel lately, I've been trying to bake more, especially since the outbreak of the pandemic.

I prepared the ingredients for my regular dough and took out the promising mixer from its packaging to discover its uniqueness, if any, its cost, its prominent advantages, how much space it occupies on the counter, and whether it's worth the price.

Upon opening the packaging, I realized I was dealing with a serious piece of equipment. Compared to my mixer, which is considered high-quality in its own right, the DAVO DSM5750 mixer looks impressive, beautiful, and serious on several levels - in one word: "professional," as the manufacturer proudly claims.

The mixer earned a place of honor on the counter in the kitchen, fitting for a product designed as a piece of art with attention to detail. Now, it's time to examine how it performs, what makes it special, and whether it's worth the (not cheap) price it demands.

The manufacturer's promises

The professional DSM5750 mixer is robust, stable, and powerful, featuring a 1800W DC motor suitable for bread doughs, cakes, and creams. It comes with a digital LED display and 11 dedicated speeds tailored to its 4 offered programs: kneading, whipping, stirring, and beating.

The device includes a 7-liter stainless steel bowl with silicone handles suitable for working with up to 2 kg of flour for effective kneading and mixing, with 11 speeds providing precise control for each recipe.

The whisk is made of stainless steel, the whipping accessory with a patented 20-wire system for planetary whipping action, and the display shows the working time, speed, pause, and timer.

The mixer's aluminum-coated body is suitable for continuous operation of up to 60 consecutive minutes with built-in cooling system.

Testing Experience

Advantages:

Unlike many other mixers I've tested, the DAVO PRO DSM5750 mixer heats up slightly less under the strain during prolonged kneading. It is very robust and stable (perhaps due to its considerable weight) and also quiet compared to similar products, even less powerful ones.

Something you might not notice if you're a casual baker, but a professional baker who often works with similar products shared from his experience that this mixer is everything he's always wanted: relatively quiet and does not shake during whipping. He also noted that its cooling mechanism works as it should and that its whipping is very fast. He also mentioned that the gluten network developed quickly, and the dough was very flexible. The taste of the challahs improved, and the dough of 1 kg flour was processed and uniform within a minute and a half, and it was still cool to the touch.

From my own test on the dough for Shabbat challahs, it seems that the dough thickens within 5 minutes even at very low speeds, and the components are strong and of high quality. However, I noticed that the small bowl that comes with the mixer (7 liters) is not sufficient for a quantity of 2 kg of dough, so those who tend to make a large amount of challah will need to purchase the larger bowl (8 liters) additionally, at an additional cost of a few hundred shekels.

Another advantage that can be attributed to it is its impressive presence, meticulous design, and professional appearance. You wouldn't want to hide it in a cupboard, but you'll need a lot of space on the counter. In my kitchen, it stands proudly in all its powerful black glory - a mixer that is manly!

Its parts are easily cleaned and dishwasher safe, and its timer allows for control during operation - practical.

Disadvantages:

The DSM5750 mixer shakes during the kneading process, but not more than other mixers we've tested. The vibrations surprised me a bit because it is very heavy, and it was expected to be more stable (it should be noted that during another use not for kneading of 2 kg of dough, it does not shake and even shakes less).

The DAVO PRO mixer is somewhat bulky compared to regular mixers commonly used in household kitchens, and it is advisable not to store it in kitchen cabinets/drawers if used frequently.

Because it is intended to be more professional than a conventional home appliance, it struggles more with small quantities of ingredients, and if you work with small quantities, you won't want such a mixer in your kitchen.

Sometimes manual intervention is required during kneading, as if it needs help to reach the materials from the entire bowl surface.

Another disadvantage that can be attributed to it is the price, considered high compared to other products, albeit less professional ones, but those that do the job in the case of amateur bakers in the home kitchen.

In Conclusion

As mentioned, the professional DSM5750 mixer I tested by the DAVO PRO brand is impressive in its beauty and power. Designed for the home kitchen, it performs professional work beyond what you've known so far. It is heavy and stable, which can be both an advantage and a disadvantage. It's a bit pricey, but if you bake a lot and have a permanent place for it on the counter, you'll find its purchase to be a good long-term investment.

For cooks and advanced bakers, there is an additional advantage: you can purchase additional accessories separately, such as: a meat grinder, a juicer, a vegetable chopper, and a pasta accessory kit.
