Flavorful, low-cal tortilla roll with every corner closed
A tortilla wrap that contains plenty of health with not too many calories.
Some concepts - roll meaning rolled, or rap meaning wrapped.
This is what is meant when they say rap/roll tortilla. Heat the tortilla on a hot pan without oil until you see a few bubbles, place on it plenty of health in the form of quinoa and spinach leaves, hard-boiled egg and pomegranate seeds (or dried cranberries), and plenty of spices, roll, tighten and give a healthy and flavorful bite.
Ingredients:
2 tortillas (preferably wholemeal)
½ cup cooked quinoa
1 cup kale or spinach leaves
2 hard boiled eggs
A handful of pomegranate seeds (if dried cranberries are not available)
A handful of peeled sunflower seeds
2 tablespoons of feta cheese
For the sauce:
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon finely chopped dill
½ teaspoon honey
2 tablespoons of yogurt
Salt, pepper to taste
Instructions:
1. In a small bowl, mix all the ingredients for the sauce. Set aside.
2. Mix all the ingredients for the filling. Season with the sauce we made and mix well. Adjust seasoning (caution, feta cheese is naturally salty).
3. On a dry pan, heat the tortilla a little on both sides.
4. Place the filling in the center, fold edges and roll.
5. Cut and serve.
