1. Pulled Pork Stuffed Sweet Potatoes

You will want to use pork loin which is higher in protein and has less fat content than shoulder cut beef. 

⦿2 lbs boneless pork loin
⦿4 large sweet potatoes
⦿1 thinly sliced red onion
⦿2 thinly sliced green onions
⦿2 minced garlic cloves
⦿½ cup beef stock
⦿1 tsp chili powder
⦿1 sp paprika
⦿½ tsp ground cumin
⦿¼ cup apple cider vinegar
⦿1 cup homemade BBQ sauce
 
Mix the chili powder, cumin, and paprika together with salt and vinegar. Rub evenly over the pork loin. Place the onions, garlic, pork, and beef stock in a crock pot; let this cook on low for eight hours. Preheat oven to 400°F and cook the sweet potatoes for 45 minutes. Once done, take out the pork loin and shred apart. Add the BBQ sauce and apple cider vinegar into the crock pot, and let it cook for 30 minutes. Cut the sweet potatoes down the middle and fill them in with the pulled pork. 

2. Paleo Chicken Fingers 

This is a healthy and tasty substitute to a classic choice. 

 
⦿1 lb chicken tenders (skinless chicken breast cut into strips)
⦿1 beaten egg (replaces the oil)
⦿½ cup almond meal (replaces the breading)
⦿½ tsp salt
⦿¼ tsp paprika
⦿¼ tsp ground coriander seed
Preheat oven to 425°F. Mix the almond meal with the spices in a bowl. Beat the egg in another bowl. Coat the chicken strips in the egg and spices, and place onto the cooking sheet. Bake for 16 to 18 minutes. 

 

3. Chocolate Avocado Pudding

You have the delicious factor of avocado, and then the substitution of dairy, gluten, and sugar to give you the ultimate dessert. 

 
⦿1 ripe avocado
⦿3 tbsp cocoa powder
⦿4 tsp honey
⦿1 tsp vanilla
⦿3 tbsp unsweetened almond or coconut milk
(if you want a thinner consistency, add more tbsps)
Place all of these ingredients into blender and blend until smooth.

4. Salmon Cakes

Sure to be a weekly meal! 

 
⦿6oz canned salmon
⦿¼ avocado
⦿2 tbsp finely diced yellow or red onion
⦿1 tbsp finely diced celery
⦿1 tbsp finely chopped parsley
⦿1 minced garlic clove
⦿½ tsp dried dill
⦿¼ tsp lemon zest
⦿1 tbsp coconut flour
⦿½ - 1 tbsp canned full-fat coconut milk
⦿2 tbsp coconut oil or olive oil
Smash the avocado and add in the veggies, spices, salmon, coconut flour, and coconut milk. Form the salmon patties by hand and place on a tray. Cover up the cakes and place in the refrigerator for about 30 minutes. Heat oil in a skillet over medium heat and then add the salmon cakes. Cook until golden brown on each side. This should take about four to five minutes.

5. Broccoli Pancakes

A clever and tasty way to include more veggies in your diet! 

⦿6-7 broccoli florets
⦿2 tbsp chopped green onions
⦿1 diced garlic clove
⦿Small handful of parsley
⦿2 tbsp pumpkin seeds
⦿½ tsp sea salt
⦿Pinch of pepper
⦿1 egg
⦿3 tbsp tapioca flour
⦿½ tsp baking powder
⦿Coconut oil
Grind up the broccoli, onions, garlic, pumpkin seeds, egg, tapioca flour, and baking powder. Heat up coconut oil in a frying pan and add the broccoli mixture to form a pancake. Cook for three minutes on each side, and enjoy your veggie breakfast!

6. Butter Scallops

This is a delicious sea food treat!

⦿2 tbsp ghee
⦿½ cup minced shallot
⦿2 tsp garlic paste
⦿2 tsp ginger paste
⦿¼ cup tomato paste
⦿½ tsp salt
⦿1-2 tsp garam masala
⦿Pinch of cayenne pepper
⦿¼ tsp ground cumin
⦿¼ tsp ground cinnamon
⦿1 pound of sea scallops
⦿8oz heavy cream
⦿Cilantro
Heat up the ghee in the frying pan over medium heat and add in the shallot to soften. Add in the spices and tomato paste to create a rich paste after three minutes of simmering. Add in the scallops and heavy cream and let them cook thoroughly, and serve with a sprinkling of cilantro. 

7. Roasted Banana Coconut Milk Ice Cream

Another healthy dessert! 

 

⦿1 tbsp melted coconut oil
⦿3 medium bananas, peeled and sliced
⦿1 can full fat coconut milk
Preheat your oven to 400°F and bake the coconut oiled banana slices for fifteen to twenty minutes (flip them halfway). Put the cooked banana slices into a blender with the coconut milk. Place the mixture into the refrigerator for about four hours. 

8. Zucchini Pasta Pesto

This gluten-free and dairy-free pasta is so simple to make!

 

⦿2 large zucchini
⦿2/3 cup roasted garlic walnut pesto
⦿1 cup cherry tomatoes
⦿Fresh basil
⦿Sea salt

Turn the the zucchini into spirals to make into noodles. Drain extra liquid; add in the tomato with pesto. 

9. Paleo Bars

This is a snack that won’t be a cheat!

⦿2 cups mixed nuts
⦿1 cup dates
⦿¼ cacao powder
⦿2 tbsp coconut oil

 

Crush the nuts in a processor until very fine and then add in the dates, cacao powder, and coconut oil. Spread this mixture on a cooking pan and place into your refrigerator. When it is ready, cut into pieces. 

10. Guacamole Stuffed Eggs

A new take on a classic dish

⦿ 6 large eggs
⦿ 1 ripe avocado
⦿ 1 tbsp lime juice
⦿ 1 tbsp homemade mayonnaise
⦿ ¼ tsp onion powder
⦿ 1 tsp garlic powder
⦿Flat leaf parsley
⦿Sea salt and freshly ground pepper

 

Make hard boiled eggs and cut in half. Remove the egg yolks and place four of them in a bowl (discard or eat the other two). Add in the avocado, lime juice, onion and garlic powder, and mayo. Mash together into a smooth paste and fill into the eggs.
