A beautiful drizzle of olive oil, a quick toast in the oven or toaster oven, and you have a wonderful dinner.

On hot days, the last thing we want to do is spend time in the kitchen, so we search for quick solutions for a light and enjoyable dinner. This bruschetta is a real hit. A beautiful drizzle of olive oil, a quick toasting, quality Manchego cheese (good cheese is a must), a few vegetables, olives, and herbs, and you’re ready for an especially crunchy bite.

Ingredients:

1 baguette

1 garlic oil spray

1 cup thinly sliced cherry tomatoes
